New Recipe Challenge

My New Years Resolution a few years ago was to cook one new recipe each week. The thought process behind this resolution was to get out of a boring cooking routine and to try some new recipes. It seemed logical to keep track of all the delicious (and not so delicious) results so I could refer back to my notes to make something again.

What I didn’t anticipate was the fact that my cooking skills would be tested, sharpened, and my confidence in the kitchen would grow rather quickly. Each new recipe is judged by my handsome, taste-testing husband and we take notes for each recipe after the meal is over. It’s a lot of fun. Over time, I  have been able to refer back to recipes that left a lasting impression, read through notes on what didn’t work before, and hone my cooking skills to create delicious culinary masterpieces of my own. Several years into the challenge I am now making 2-3 new recipes each week and modifying most recipes to suit my particular tastes and dietary needs (organic, gluten-free, and dairy-free)

The Challenge: Cook a new recipe once each week. Focus on fresh, colorful, live ingredients.

Pesto Stuffed & Prosciutto Wrapped Chicken Breasts

Stephanie’s Notes: I made this recipe because I had 4 slices of prosciutto in the freezer to use up. I used 1/4 cup grapeseed oil instead of the olive oil in the pesto. Broiled for a few minutes at the end. Served with sautéed red onion, button mushrooms, and green beans. 

Smoked Leg of Lamb with Dijon Mustard and Rosemary

Stephanie’s Notes: Omitted beer from marinade; used olive oil, Boar’s Head Dijon mustard with horseradish and white wine vinegar, fresh rosemary, and parsley from the garden, salt, and pepper. Blended marinade in the food processor and coated the meat before adding it to the smoker.

Stephanie’s Notes: Delicious lunch salad on top of chopped romaine lettuce and fresh baby spinach. Omitted the jalapeño because I didn’t have one. Loved the tahini-based salad dressing.

Red Lentil and Spinach Masala

Stephanie’s Notes: The red lentils cook a little more quickly than other types, but it still took 25 minutes to simmer. The recipe turned out delicious but is not the best option for a quick weeknight dinner.

Sweet Potato Shepherd’s Pie

Stephanie’s Notes: Added a dash more sea salt and ACV for additional flavor. Doubled the amount of parsley for a greener color and flavor. Added a lot of water (~3.5 cups) and some xanthan gum to thicken.

Carolina Style BBQ Pulled Lamb

Stephanie’s Notes: So good!!! The flavor is richer than pork. Used lamb leg instead of pork shoulder. It was a smaller cut of meat, so it cooked much faster. Cooled for 45 minutes, drained off the liquid, pulled meat into shreds, added Carolina style BBQ sauce until moist throughout.

Cowboy Pinto Bean Soup

Applesauce Oatmeal Raisin Cookies

Best Ever Roasted Pumpkin Seeds

Chicken Pumpkin and Mushroom Stew

Indoor S’Mores

Beef Short Ribs

Stephanie’s Notes: Used Abita root beer from Lucky’s cafe on tap. Marinated overnight with sweet onion rings. Cooked for 3 hours. The meat was fall off the bone tender. Kept the ribs and juices in the porcelain 9” x 13” casserole dish, the fat spilled and made a huge mess. Next time I would separate the ribs from the juices and then toss in the Root Beer BBQ sauce right before serving. 

Spiced Almond Shortbread Cookies

Stephanie’s Notes: Doubled the recipe. The dough did not form as expected in the Vitamix and I may have overtaxed and heated up the butter. Chilled the dough for 45 minutes and then rolled into balls and dusted with powdered sugar. Cooked for 11 minutes, but they were not yet firm. Baked for another 11 minutes and the dough was still not firm. Didn’t taste worth the calories. I threw most of them away.

Smoked Pot Roast

Stephanie’s Notes: Made gravy with the juices but adding a few tbsp of tapioca flour to water and brought the juices to a boil in a small saucepan and whisking until thick and creamy. Bill said this was the best pot roast he has ever eaten in his life. 

Smoked Baby Back Ribs

Stephanie’s Notes: Cooked at 225* for 3 hours, brushed with Bone Sucking Original Recipe Sauce add about 1/2 cup spiced apple cider, and wrapped in foil. Increased temperature to 350* and cooked for an additional 45 minutes. Let rest for 15 minutes before serving. THE BEST RIBS EVER!!!

Spring Quinoa Salad

Lemon Dill Poached Salmon (or Steelhead Trout)

Stephanie’s Notes: Substituted steelhead trout for salmon. Simmered on low for about 15 minutes and cooked to an internal temperature of 145*. Next time, will drizzle some fresh lemon juice on top of the cooked fish for a bit more citrus flavor. Served with steamed broccoli and sautéed sliced mushrooms. **Recipe update – this recipe is now in my weekly rotation. Fresh wild-caught salmon filets from Aldi yield the best results.

Pork Tenderloin with Herb Gravy

Stephanie’s Notes: Used 3/4 package Costco rotisserie chicken breasts, 1/2 package Costco marinated and grilled artichoke hearts, 1 package frozen spinach, and 1 cup raw cashews made into a “sour cream”. Topped with half a bag of vegan mozzarella cheese. This recipe was out of this world delicious with lots of leftovers. 

Brazilian Chickpea Salad

Turkey Meatballs in Sage Cream Sauce

Stephanie’s Notes: The meatballs were dry, but the sauce totally made up for it. Served with roasted Brussels sprouts and leftover sweet potato hash from breakfast that morning. 

Grilled Chicken Breasts

Stephanie’s Notes: This recipe turned out very good. The chicken was moist and juicy. Used the ancho-chili seasoning blend. Served with roasted summer veggie medley (grilled corn, yellow squash, asparagus, red onion, soaked sun-dried tomatoes, and fresh basil from the herb garden.

Pumpkin Chili

Used a box of gluten-free stuffing mix from Aldi. This recipe was very quick, easy, and tasty. It has a bit more carbs than I would prefer, but it was a good recipe and I would make it again.

Loaded Mashed Potato Cakes

Stephanie’s Notes: Used Daiya cheddar style shreds, ghee, almond flour, thick-cut smoked peppercorn bacon, 4 eggs (instead of 2). Made the cakes in a waffle iron and served with cashew sour cream. Served with smoked hot Italian sausages and a Maple Bacon Bourbon side salad.

The Best Greek Chicken Marinade

Stephanie’s Notes: Used fresh herbs from the garden and avocado oil instead of canola oil. Marinated HUGE chicken breasts overnight. Cooked on the Traeger on high heat until each piece reached an internal temperature of 165*. The chicken turned out very flavorful and juicy. Served with a roasted vegetable medley seasoned with Greek spices.

Used GF butternut squash rotini pasta noodles, ghee instead of butter, tapioca flour to thicken the sauce, and cashew cream/almond milk instead of dairy milk. Topped with shredded vegan mozzarella cheese. Leftovers were great for lunches throughout the week.

Potato Lentil Curry

Stephanie’s Notes: Added 1 lb of cooked BBQ rib meat once lentils and vegetables were finished cooking. The curry sauce had a very deep flavor and would be good with just about any combination of vegetables and/or meats.

Grilled Swordfish with a Mediterranean Twist

Stephanie’s Notes: My first time trying swordfish. It was firm and meaty with great taste. I marinated the fish for about 30 minutes while I waited for my Traeger grill to heat up. Next time, I would marinate the filets for at least a few hours. Served with roasted asparagus and mushrooms and a drizzle of teriyaki sauce on the fish. Delicious!

Stuffed Acorn Squash
